About the Ingredients
I am very particular about every ingredient I use, down to its packaging. I’m soooo excited to be growing my own pandan and ube.
When a local ingredient is not possible (like a coconut for example), I am committed to finding it non-GMO or organic. I review its packaging to make sure cans are BPA free, and will opt for products that are environmentally-friendly. If I’m using chocolate, I make sure there is nothing except the cocoa, cocoa butter and sugar. No soy lecithin. Most soy in the US is GMO.
Examples of local ingredients I use are:
Hyperion coffee beans to make my espresso powder
Farmer’s Creamery or Calder dairy milk (they use glass bottles!)
Guernsey and Farmer’s Creamery whipping cream
Zingerman’s organic AP flour
Mindo’s chocolate
Schwartz eggs (there is no soy in their feed)
Cares Family Maple Syrup

I am also committed to not using soybean oil in my baking. I use grass-fed butter or organic avocado oil.
I do my baking in tin coated pans. I do not use non-stick because of the chemicals.
I am big on composting and compost any kitchen waste and grow my own pandan and ube.
